Tamago’s Famous Ciopinno

Mode of delivery: Instant Pot

You can use a pressure cooker or a regular pot, but if you do, you may need to adjust the cooking times.

Serving Size: 3

Prepare:

1 Onion (medium size-diced) Red or Yellow doesn’t really matter.

1 Bell Pepper (small-diced) Red, Yellow or Green

3 cloves garlic (Crushed and chopped) *Or substitute a heaping tablespoon from a jar of minced 

¼ cup Basil (chopped)* Or substitute a tablespoon of dry.

1 tbs Dried Oregano

1 tsp Italian seasoning 

1-2 tbs Olive oil

1/2 tsp Crushed red pepper flakes (or two of the packages like you get with a pizza)

Sauté all this in the olive oil until onions are golden brown

Add:

14.5 oz Can Diced Tomatoes

1 cup Chicken broth (or clam juice)

½ cup Cooking Sake (or cooking wine)

1 Bay leaf

Cook in Instant Pot on High Pressure for 20 minutes. Let sit for 10 minutes. 

Add:

1.5 lbs Costco Premium Seafood Medley (frozen)

*Substitute any seafood you want. 

Cook in Instant Pot on High Pressure for 3 minutes. Release pressure (carefully)

Add:

1 6oz Salmon Fillet cut into bite size chunks (take skin off)

Cook in soup for about 5 minutes until done.

Serve with warm French bread (or buttered garlic bread)

NOTE: Add some cream to the leftovers and serve over pasta.
